Taco Tuesday Recipe: Tequila Chicken Tacos with Mango Salsa

Today we want to share a great recipe for all you Taco Tuesday fans: Tequila Chicken Tacos. These delicious tacos can be made with any premium tequila, but we like to use Bandero Tequila from our co-founder, Jonathan Kendrick. In honor of national salsa month, we recommend making a fresh mango salsa to top off your tacos. The mango is the official fruit of May and three varieties are at their best during this season: the Francis Mango, the Tommy Atkins Mango, and the Honey Mango

Mango Salsa

1 mango of your choosing (diced)
½ cup red bell pepper (diced)
½ avocado (diced)
1 red onion (minced)
2 tablespoons fresh cilantro (minced)
1 fresh jalapeño (minced)
2 tablespoons lime juice
1 tablespoon lemon juice

Mix all ingredients in a medium bowl. Cover and refrigerate for 30 minutes before serving. 

Tequila Chicken Tacos 

1 pound boneless, skinless chicken breasts
1 tablespoon vegetable oil
½ cup Bandero Tequila
1 pinch of kosher salt
1 pinch of ground pepper
½ tablespoon chili powder
1 fresh jalapeño (diced)
4 limes (juiced)
Corn tortillas
Red cabbage (shred, serve as topper)
Cotija cheese (serve as topper)

Add the tequila, lime juice, diced jalapeño, and spices to a large baking dish. Whisk all ingredients together. Add chicken breasts and cover to marinate for at least 20 minutes in the refrigerator. 

While waiting, shred the red cabbage. 

Heat the vegetable oil in a pan or large skillet over medium-high heat. Add in the chicken and cook for about 8 minutes per side, until golden and cooked through. Let rest for 10 minutes and then slice.

Warm the tortillas and prepare tacos with the chicken, red cabbage, Cotija cheese, and the fresh mango salsa.
